White dashi

This elegant white dashi is made by combining a mixed dashi stock of bonito flakes, mackerel flakes, and skipjack tuna flakes, all produced in Japan, with kelp dashi from Hokkaido. It makes it easy to create dishes that showcase the natural colors of ingredients, such as clear soups, udon noodles, seasoned rice, and steamed egg custard.
