Since our establishment in 1699 (Genroku 12), we have continued to conduct business centered on bonito flakes and dashi. In particular, we focus on producing "Honkarebushi," which are bonito flakes matured over six months.

For over 300 years, we have been involved with the changing seasons unique to Japan, the blessings from the seas and mountains, the rich climate and topography, and the Japanese food culture nurtured through a long history. Dashi, including bonito flakes, which is essential to Japanese cuisine, can be described as the "flavor infrastructure" that determines the taste of a dish. Despite having almost no calories, dashi makes food delicious and satisfying.

It also contributes to achieving a balanced and healthy diet. Dashi plays a role in Japanese cuisine that is unparalleled globally. In 2013, Washoku (traditional Japanese food culture) was recognized as a UNESCO Intangible Cultural Heritage. Currently, Japanese cuisine is attracting attention worldwide, but within Japan, it seems that Japanese people themselves do not fully recognize the goodness of their own food culture.

In such a situation, we believe that recognizing the importance of food once again will provide an opportunity to convey its merits not only domestically but also globally. We also believe that it will lead to the further development of Japanese cuisine. We feel great potential in the future of Japanese food culture, and we also feel the future potential through bonito flakes and dashi.

We aim to realize "transmission" by conveying the authentic taste of bonito flakes cultivated over a long history, "creation" by developing new foods for the next generation, and "integration" by evolving to reach a wider audience. We are striving to achieve this "transmission," "creation," and "integration."
